Smoked seafood is a gourmet item that adds flair to special menus. Salmon is the most familiar smoked fish, with every processor having a proprietary recipe and some enjoying a widespread reputation. But smoked salmon has plenty of competition. Smoked trout, while less flashy, is nonetheless gaining ground due to its many fine qualities.
In 2007, SIAL Montréal’s annual “100 Innovative Products Showcase” awarded second prize to one of our young, creative companies for their frozen scallop ceviche. More innovation is underway in the crab claw clusters and frozen lobster tail categories. Moreover, our pandalus borealis shrimp comes from very cold, deep water and is affectionately referred to as the small shrimp with the big taste.
